Delux Scrambled Egs

Amount Measure Ingredient -- Preparation Method

3 eggs -- at room temperature
2 tablespoons onion -- chopped
2 cloves garlic -- chopped
1/4 teaspoon chili powder
1/2 teaspoon tabasco sauce
2 tablespoons fresh parsley -- chopped fine
2 ounces ham -- cubed
1 ounce cheddar cheese -- grated
salt and pepper -- to taste
1 1/2 tablespoons butter

Put eggs in a bowl and add 2Tt water. Stir vigorously with a fork or whisk. Add Chli powder and Tabasco and stir until mixes. Set aside. Heat skillet and add 1 T oil Allow to heat. Add onion and saute for a few minutes, but not brown. Add garlic and continue sauteing 2 more minutes. Add ham & saute until warmed through. Add fresh parsley. Saute an additional minute. Add Egg and allow to set some before stirring. Stir ocassionaly until set. Remove to a bowl or plate and cover with cheese. Set under broiler or in microwave until cheese melts.
