SPINACH WITH HOT BACON DRESSING

225 g spinach leaves -- stems removed, 8 oz
1 tbsp olive oil
30 g butter -- 1 oz
1 cl garlic -- crushed
2 slices bread -- crusts removed and
cubed
2 tbsp olive oil
120 g bacon -- diced, 4 oz
60 g fresh mushrooms -- sliced, 2 oz
1 cl garlic -- crushed
salt and freshly ground black pepper -- to taste
1 tbsp cider vinegar

Arrange the spinach leaves in a serving bowl. Heat 1 tbsp olive oil and the butter in a skillet/frying pan. Add the garlic and bread cubes and saute until golden brown. Remove with a slotted spoon and drain. Add an additional 2 tbsp olive oil to the pan and sauté the bacon until it is just brown in colour. Add the mushrooms, the second clove of garlic, salt and pepper and sauté 2 minutes more. Add the vinegar, bring to the boil and remove From heat. Pour the hot dressing over the spinach leaves, add the croutons and lightly toss together. Serve immediately.
