4 oz pickled onions -- 8
1 sm lettuce -- shredded
1/4 cup olive oil
2 tbsp tarragon vinegar
1/4 tsp honey
salt and freshly ground black pepper
1/2 lb cooked chicken breast halves -- 225g sliced, strips
1/2 cup green grapes -- seedless
2 eggs, hard-boiled -- quartered
1 anchovy fillets -- split lengthways
2 tsp parsley -- finely chopped

Cover the onions with water in a small saucepan and bring to the boil. Drain and refresh in cold water. Spread the shredded lettuce to form a bed on a flat serving platter. Combine the oil, vinegar, honey, salt and pepper by shaking well in a screw-topped jar. Lightly toss the onions, then the chicken strips, the grapes and finally the eggs in (he dressing and arrange them separately on the chopped lettuce. Garnish with anchovy fillets, chopped parsley and sprinkle with the remainder of the dressing.
