4 lettuce leaves
1/4 cup orange juice -- or grapefruit
2 avocados -- peel,seed,quarter
diced
225 g cooked shrimp -- 8 oz
1/2 cup mayonnaise
1 tbsp lemon juice
1 tbsp tomato sauce
1 pinch cayenne pepper
1 dash Tabasco sauce
2 eggs, hard-boiled -- quartered
8 olives -- green,stuffed,sliced
Arrange the lettuce leaves on a serving platter. Combine the grapefruit, avocado, prawn meat, mayonnaise, lemon juice, ketchup/tomato sauce, cayenne pepper and Tabasco in a mixing bowl. Spoon the salad mixture into the lettuce leaves and decorate with egg wedges and olives.
