TURKISH SHEPHERD'S SALAD

Amount Measure Ingredient -- Preparation Method

2 lg tomatoes -- chopped
1/2 lg onion -- sliced
2 mild green peppers -- de seed, slice
1 cucumbers -- peel, dice
2 cups parsley -- chopped for garnish
salt to taste
2 tbsp olive oil
2 tbsp lemon juice

Slice the onion and rub slices with a little salt. Leave for a little while then rinse under cold water. Place in the bottom of a salad bowl. Add chopped tomatoes,
peppers, cucumber and parsley. Mix dressing in screw top glass jar and shake vigourousley. Pour over salad as yous serve.
