SPICY EGGS AND SWEET PEPPERS

2 green bell peppers -- peeled and seeded
1 tbsp paprika
2 chili peppers
fresh green or red chili peppers -- peeled and seeded
2 tbsp Harissa
1/4 cup tomato paste
1 tbsp caraway seed
3 cups water
1/2 cup virgin olive oil
4 eggs

Blend all the fresh peppers until green and soupy. Should take about 30 seconds. Dissolve tomato paste in 1 cup of water and place aside. Heat the olive oil in a large pan and add the pureed peppers, the tomato mix, paprika, Harissa™ and caraway seeds. Season to tatste. Pour in 2 cups of water and bring to the boil. Reduce heat and simmer for 20 minutes. Crack the eggs into the mixture leaving the egg yolks intact. Cook for about 15 minutes. Season with salt and pepper and serve.
