SHRIMPS WITH GARLIC AND BUTTER

20 lg green prawns -- prawns
1/2 cup butter
2 bay leaves
1/2 cup vinegar
15 cl garlic
1/2 tsp red pepper
2 tsp salt
Remove shells but leave tails on. De vein and cut slightly down the middle and flatten slightly. ( Butterfly). Boil prawns in a pan with vinegar, bay leaf, salt and 4 cups water. Cook for 4 minutes or until a beautiful light salmon colour. Remove and drain.
Remove some of the liquid that the prawns were cooked in. Simmer to reduce the liquid.
Melt the butter with chopped garlic and 1 teaspoon salt in a pan. Put the shrimps in the pan and cook about 2 minutes a side.
Remove from pan and place on a sald base. sprinkle shrimps with red pepper.
Put about a cup of the original cooking fluid into the pan and create garlic sauce. Serve prawns dressed with garlic sauce
