SARDINES IN GRAPE LEAVES

1 kg sardines -- 2lb
20 grape leaves
1/2 cup olive oil
DRESSING
1 lg lemon -- juiced
1 tbsp white wine vinegar
1 tbsp virgin olive oil
1 pinch salt -- to taste
GARNISH
1 bunch parsley -- chopped for garnish
Soak leaves in water. Clean and scale fish or buy prepared. Season and wrap each fish in a leaf. Line BBQ with leaves. Brush more leaves with olive oil and wrap around each fish. Leave for an hour. Place fish on leaves over BBQ and cover with another layer of leaves. Cook on low heat for 3 or 4 minutes a side turning fish once. Prepare dresing, mixing well in screw top jar. Remove from BBQ unwrap and serve hot. Garnish with parsley.
