ROASTED TURKEY

1 turkey
1 cup water
1/3 cup butter
1 carrot -- peel and quarter
2 onions -- peel and quarter
3 cl garlic -- peel
salt and pepper -- to taste
Put all ingredients in a baking tray with the turkey. Cook in a moderate oven for 1 hour, turning the bird and basting once or twice. Turn up the oven to 400°F-200°C. Check and turn the bird every 15 minutes. The cooking time will vary according to the size of the bird. Another hour should be enough. Check with fork. Cook a little longer if required.
Remove from oven and allow to cool for 10-15 minutes. Remove bird from baking tray. Puree all remaining ingredients in baking tray and pour into sauce bowl. Separate bird into pieces and serve hot with sauce.
