1 kg mackerel fillet -- 2lb
1/4 cup olive oil
1 lemon -- sliced
1/2 bunch parsley -- chopped
1/2 bunch dill -- chopped
1 1/2 tsp salt
1/2 tsp black pepper

Lay fillets in shallow pan. Add olive oil, salt and pepper, dill, chopped parsley and lemon slices. Add water to cover the fish. Cover and cook for 10 minutes on a modearte heat. Remove from heat and serve.
