1 kg mullet fillet -- cleaned 2lb
1 cup olive oil
1 lg onion -- sliced
1 stalk celery -- chopped
5 cl garlic -- chopped
2 tbsp lemon juice
1 bunch parsley
2 med tomatoes -- chopped
1 1/2 tsp salt
Saute onions in olive oil for 5 minutes. Add three cups water and cook a further 20 minutes until onions puree. Combine tomatoes, garlic and celery and spread over onion. Cover and cook for 20 minutes over medium heat.
Cut fish into 5cm slices about 1". Mix remaining olive oil and salt. Add to vegetable mix with the prepared fish. Cook for 15 minutes at medium high heat. Stir at regular intervals. Add lemon juice and parsley. Remove from heat and serve.
