1 kg fish fillets
285 milliliters olive oil -- 8 oz
1 tbsp flour
1 pinch salt -- to taste
1 lemon -- wedged
1 tbsp parsley -- sprigs

Clean and wash fish. Salt fish and rest for 10 minutes. Flour fish and fry in hot oil until golden brown. Remove and place on absorbent paper. Arrange fish on a serving platter. Place lemon wedges around fish and decorate with parsley.
