1 cup yogurt -- 285ml
3 cups tomato juice
1 tbsp. olive oil
2 tbsp. lemon juice
2 tbsp vinegar
1/2 tbsp. curry powder
Salt -- to taste
2 tbsp. chopped parsley
Whip yogurt until smooth, then add tomato juice, oil, lemon juice, vinegar, curry and salt. Blend well. Cover bowl and refrigerate for 4 or 5 hours. Serve in small bowls and sprinkle with parsley.
