1/4 cup olive oil -- or salad oil
2 tbsp lemon juice
1 tbsp vinegar
salt and black pepper -- to taste
1 can kidney beans, cooked -- drained
1/4 cup chopped parsley
2 tbsp dill -- chopped
1/4 cup fresh mint leaves -- chopped
1 lg onion -- thin sliced
1 lg tomato -- sliced
1 green pepper -- sliced
8 black olives
2 hard-boiled eggs -- quartered
In a large salad bowl place oil, lemon juice, vinegar, salt and pepper and blend thoroughly. Add the drained beans and mix well. Sprinkle parsley, dill, mint and onion slices over beans. Garnish with tomato, green pepper, black olives, and quartered eggs.
