THAI TURKEY RIBBONS

1 lb boneless turkey breast
2 tbsp peanut butter
2 tbsp soy sauce
2 tbsp rice vinegar -- or lemon juice
2 tbsp lemon juice
2 tbsp splenda
1 tbsp hoisin sauce
2 tsp sesame oil
1 tbsp cilantro -- chopped

Cut turkey into 16-20 long, thin (1/8" —1/4") 4x8mm pieces. Thread on to 8 skewers. Combine all remaining ingredients in a bowl. Mix well. Brush sauce over turkey ribbons, coating both sides of meat. Place skewers on greased grill, or broil for 4-6 minutes or until turkey is no longer pink. Serve with rice and stir-fried vegetables.
