1 kg shrimp, large, R-T-C -- 2lbs prawns
- Marinade -
3 cl garlic -- crushed
1 tbsp grated ginger root
2 tsp fish sauce
1 tbsp chili sauce -- mild sweet
2 tbsp lime juice
2 tbsp peanut oil
1 tbsp fresh coriander -- chopped
1 tbsp fresh mint
1 bunch bok choy
2 lemons -- sliced
Clean and devein Prawns. Combine all marinade ingredients and marinate prawns for at least 2 hours. Best overnight. Cut Bok Choy into 2" - 50mm pieces. Blanche in boiling water for 30 seconds. Drain and reserve. Remove prawns from marinade and drain. Pour some marinade into pan and heat until very hot. Cook prawns for about 2 minutes, turning constantly. Throw bok choy in with prawns and cook a further 1 minute. Place in large serving bowl with lemon slices.
