THAI SALMON WITH COCONUT & BABY BOK CHOY

500 g Atlantic Salmon fillets -- skinned 1lb
375 ml coconut milk -- 10-11 fl ozs
1 tsp curry paste -- thai red
1 tsp brown sugar twin
2 stalks baby bok choy
washed & roughly shredded
1 tbsp coriander leaves
Lime wedges to garnish

Cut Salmon into chunks & set aside.
Gently heat coconut milk, hai red curry paste & brown sugar twin in a large saucepan.
Add in Salmon & cover pan. Cook for 3-4mins over a gentle heat until Salmon is opaque.
Stir in bok choy & replace lid. Cook for 2-3mins or until bok choy has wilted.
Stir in coriander and serve immediately with lime wedges.
