1/2 kg Chicken -- 1lb sliced
1/2 tin Coconut Milk
1 tsp Red or Green Thai Curry paste (to taste)

Stir-fry chicken pieces, then add half a tin of coconut milk and the curry paste. Then add Stir Fry Veg, Heat all through and simmer for a few mins.
Serves two, filling and yummy, and is sort of a cross between a stir fry with a lot of runny-ish sauce, and a soup that's full of chunky bits. (It's a lot nicer than it sounds - trust me).
