CALAMARI SALAD

454 g calamari -- 1lb
2 tbsp Fish Sauce -- Tiparos
1 tbsp lime juice
1 cl garlic -- sliced
1 red chiles -- sliced
1 tbsp celery -- finely sliced
1 stalk lemon grass -- finely sliced
2 lg spring onions -- sliced
1 tbsp mint leaves
2 tbsp coriander leaves
lettuce leaves
lemon -- cut into wedges

This light and refreshing dish is great on hot days. Prepare a couple of hours before and serve chilled.

Method:
1. Clean the squid, score it on the inside and cut into bit size pieces.
2. Boil until tender in water with a little vinegar (about 30 seconds).
3. Drain and cool.
4. Pound the chilli and the garlic in a mortar and stir in the fish sauce and lime juice.
5. Pour this mixture over the squid.
6. Add the sliced lemon grass, spring onion, celery, mint and coriander leaves and mix lightly.
7. Line a serving dish with the lettuce leaves and spoon the salad on top.
8. Garnish with extra coriander leaves and lemon wedges.
