BBQ PRAWNS ON LEMON GRASS STICKS

16 med shrimp -- prawns
4 sticks lemon grass
1/3 cup chili sauce -- sweet Mae Ploy
1 tsp honey
1/3 cup light soy sauce -- Yeo's Lighthouse
Method
1. Shell prawns (leaving the tail on), and remove vein.
2. Mix the chilli sauce, soy sauce and honey in a bowl. Place the prawns in this marinade and cover. Allow to stand.
3. Clean the lemon grass and remove the older looking stems. With a knife, trim the root end of the lemon grass to a pointed finish (like a bamboo skewer).
4. Take the prawns and skewer them on the lemon grass, three to a stick.
5. Heat the grill plate and cook prawn sticks for 2-3 minutes a side, while basting the prawns with the marinade.
6. Arrange prawn sticks on a plate and garnish with mint.
Some hints when preparing this recipe: Chop the mint just before serving, as it deteriorates rapidly.
