1 kg shrimp -- prawns 2lb
2 tbsp olive oil
6 cl garlic -- crushed
50 g butter -- chopped 2 oz
1 tbsp lemon juice
1 1/2 tbsp chopped fresh parsley
Shell and devein prawns, leaving heads and tails intact. Heat oil in large pan, cook garlic, stirring, until soft. Add prawns to pan, cook, turning gently, until prawns start change colour and are almost cooked. Add butter and juice, cook, until prawns are just cooked through. Stir in parsley.
