4 oz fresh mushrooms -- 125gr
3 tbsp olive oil
1 tbsp lemon juice
1 cl garlic -- crushed
salt and freshly ground black pepper
1 tsp finely chopped parsley
Wipe mushrooms with a clean, damp cloth and slice thinly; do not remove the stalks.
Combine oil, lemon juice, garlic, salt, pepper and parsley.
Pour the dressing over the mushrooms and make sure they are coated on all sides.
Chill, covered, for several hours before serving. The raw mushrooms are extremely absorbent so you may have to put some more of the dressing on them.
Serve chilled.
