1 kg chicken wings -- 2lb
1 tbsp white wine vinegar
1 med onion -- thinly sliced
6 cl garlic -- crushed
2 sm red chiles -- finely chopped
1 tbsp paprika -- ground sweet
1 tsp paprika -- ground hot
1/4 cup olive oil
1 tbsp fresh oregano -- leaves, chopped

Remove and discard wing tips. separate first and second joints. Combine chicken with vinegar, onion, garlic, chillies, paprika and oil in medium bowl; cover, refrigerate for 3 hours or overnight.
Place chicken mixture, in a single layer in large shallow baking dish. Bake, uncovered, in moderate oven about 1 hour or until browned and cooked through. Stir in oregano. Makes 24. Can be prepared a day ahead.
