GREEN BEAN & PEANUT BUTTER SALAD

175 g green beans -- or french 6 oz
1 tbsp sesame oil
1 sm onion -- very finely sliced
60 g peanut butter -- natural 2 oz
1 tsp honey
2 tbsp soy sauce
1 tsp fish sauce
1 tbsp boiling water
Lightly boil the beans in salted water until tender but still crisp. Refresh in cold water and slice diagonally into long very thin strips. Heat the sesame oil in a small skillet/frying pan and sauté the onion over medium heat until brown and almost crisp. Remove with a slotted spoon and drain. Blend the peanut butter, honey, soy sauce and fish sauce, adding enough boiling water to form a thin paste. Briefly chill the ingredients then toss the sliced beans in the peanut sauce. Arrange in individual serving dishes and garnish with browned onions.
