Oven-baked Onion-cheese Frittata

2 tablespoons olive oil
1 small onion -- minced
1/2 cup Parmesan cheese
6 eggs
1/2 teaspoon oregano
1/8 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon black pepper

Heat oven to 350ºF. Sauté onion in oil until golden. Stir beaten eggs and all other ingredients into the pan. Mix well. Pour into a greased glass baking dish and bake for about 30 minutes, or until set and top is golden.
Try other goodies in your oven frittata: cooked artichoke hearts, peppers, sausage, spinach and Parmesan, ham,
mixed summer vegetables and cheese.
