1/4 cup butter
1/2 cup olive oil
1 1/2 cups onion -- finely chopped
1/2 cup celery -- finely chopped
2 1/2 cups button mushrooms -- finely chopped
2 teaspoons parsley -- finely chopped
2 pounds lean ground beef
2 tablespoons tomato puree
1/2 cup Tomato Sauce
1 cup red wine
1 3/4 pints beef broth
1 tablespoon flour -- or soy flour

Sautre onions in oil and butter for one minute. Add celery, mushrooms and parsley. Stir cook for 5 min. Crumble in ground beef and cook until lightly browned. Sprinkle flour over the ground beef and stir until well blended. Stir in puree and tomato sauce. Add wine and broth stirring constantly. Season with spices as desired. Simmer, stirring occasionally, for about 1 hour or until thickened.
