Chicken with Creamy Red Sauce

2 onions -- sliced
1/4 cup butter
4 pounds chicken pieces -- 2k
1 dash freshly ground black pepper
1/2 cup heavy cream
1 bechamel sauce mix -- prepared
2 tablespoons butter
2 tablespoons corn flour
1/4 cup cream
1/4 cup water -- miix with cream
1 pinch salt
1 pinch freshly ground black pepper
1/4 large onion -- chopped
1 whole bay leaf
1 whole clove
1/2 teaspoon peppercorns

1 tablespoon tomato paste
1 teaspoon curry powder
1/2 teaspoon paprika
1 lemon -- juiced
1 pound mushroom -- 500g sliced

Sauce:Requires two small saucepans. Place onion, peppercorns, cloves cream and water in saucepan. Bring to simmer and add salt and pepper and bay leaf . Bring to the boil stirring constantly. Turn off heat, cover and let stand for 7 minutes. Strain liquid and discard pulp
In another saucepan melt the butter in a pan and stir in flour slowly to make a paste - (roux). Cook for 2 or 3 minutes. Add onion mix to roux. Bring to the boil and turn to low heat. Simmer for a further 3-5 minutes. Add a little water if the sauce is too thick. Bring to simmer. Season to taste and serve hot.

In a large saucepan, saute onions in butter 2 minutes. Add chicken pieces, salt and pepper to taste. Cover with cream. Simmer, covered, 30 minutes, stirring occasionally. Remove chicken pieces and set aside. Keep warm. Add bechamel sauce and tomato paste to cream sauce. Boil 2 minutes, stirring constantly.
Remove from heat and strain. Return to saucepan. Add curry powder, paprika and lemon juice to sauce. Blend well. Add chicken and mushrooms. Simmer, uncovered, 15 minutes.
