Chicken Mozzarella

1/2 cup bread crumbs -- whole-wheat
1/4 cup wheat germ
8 chicken breast, no skin, no bone, R-T-C
flattened to 1/4" 7mm
1/2 cup skim milk
2 tspp sesame oil
8 fluid ounces tomato sauce -- 250g
1 tablespoon fresh parsley -- minced
1 teaspoon dried basil
1/8 teaspoon pepper
1 teaspoon dried oregano
1 garlic clove
4 ounces shredded mozzarella cheese -- 115g

Preheata oven to 350.
Combine breadcrumbs and wheat germ. Set mixture aside.
Dip chicken in milk. Dredge in bread crumb mixture. Coat a large skillet with cooking spray. Add sesame oil and heat over medium. Add chicken to skillet and cook until browned on both sides. Drain. Pour 1/3 tomato sauce in bottom of a 13x9x2-inch baking dish coated with cooking spray. Place chicken breasts in dish.
Pour 1/2 of remaining tomato sauce over chicken. Sprinkle with parsley, basil, oregano, pepper, garlic and cheese. Top with remaining tomato sauce. Bake for 30 minutes or until done.
