cup olive oil
1 large eggplant -- finely diced
3 stalks celery -- chopped
4 ounces capers -- drained
1 cup kalamata olive -- pit 7 chop
3 large tomatoes -- core & dice
1 tablespoon red wine vinegar
1 bunch parsley -- rough chopped
1 tablespoon lemon juice
1 pinch salt & freshly ground black pepper -- to taste
6 whole eggs, hard-boiled -- cut in half

Heat the olive oil in large heavy based pan. Add the eggplant. Cook, stirring for about ten minutes until light brown. Add the celery and cook a further 3 minutes. add capers and cook a further 5 minutes. Reduce heat to simmer and add olives, tomatoes and red wine vinegar. Cook for about 6-7 minutes until vinegar evaporates. Remove from heat, add lemon, salt and pepper. Cool for thirty minutes. Add 6 hard boiled eggs , halved in a large dish.
