1 large spinach -- baby, wash, dry
6 slices pancetta -- or thin bacon
1/2 pound button mushrooms
***DRESSING***
3/8 cup olive oil
2 tablespoons balsamic vinegar
salt and pepper
Wash and dry the baby spinach if not ready prepared. Fry or grill the pancetta until crispy, and chop. Arrange spinach in serving bowl adding the
pancetta and mushrooms. Dressing: mix together well and serve with the salad.
