5 kippers -- boneless
- Marinade-
1 tbsp lemon juice
1 tbsp olive oil
1 pinch mustard
Pepper
1 lemon -- in wedges
Kippers tossed in a tangy marinade makes the ideal starter.
Combine all the ingredients for the marinade and mix well together. Remove skin from kippers and slice thinly, slantwise. Put kipper pieces into a bowl. Pour marinade over, cover and allow to steep for an hour or overnight, if possible. Serve with buttered brown bread. Garnish with chopped parsley and lemon wedges.serves 10 portions
