CREAMY CRUNCHY WHITE FISH SALAD

3 1/2 lbs fish fillets -- white 1.5k
(cod, haddock,whiting, hake) -- flaked
- Sauce-
2 tbsp cucumber -- finely chopped
2 tbsp green pepper -- finely chopped
2 tbsp radishes -- thinly sliced
3 cartons yogurt
Salt and pepper -- to taste
1 tsp Lemon zest
1 Bay leaf
1 tbsp Peppercorns
Poach the fish in boiling salted water, flavoured with lemon zest, bayleaf and peppercorns, for 3 minutes. Remove and drain. Cool. Combine the vegetables for the dressing. Stir in yoghurt. Season and mix well. Pour the chilled dressing over the flaked fish. To garnish sprinkle with chopped parsley. Serves 10 portions
