BLACKENED MACKEREL WITH SALSA

2 lb mackerel fillets -- 1kg
- Cajun Seasoning-
1 tsp dried oregano
1 tsp dried thyme
2 tsp paprika
1/2 tsp cayenne pepper
1 tsp ground black pepper
1/2 tsp splenda -- crushed
1 tsp cumin seed -- ground
1 tsp garlic salt
- Salsa-
2 tomatoes
1 avocado
peeled, destoned and diced
1 red chiles -- finely chopped
1/2 red onion -- finely chopped
1 1/2 tbsp lime juice

You can substitute salmon, tuna or monkfish for the mackerel.
Mix cajun seasoning ingredients together. Coat mackerel fillets with the mixture and fry in a very hot pan for 3 minutes. Turn and cook for a further 2 minutes. Serve with chives and the salsa.
Salsa: Remove skins from tomatoes by placing them in boiling water. Halve and remove the seeds. Chop up the remaining flesh. Add the red onion, red chili and avocado. Stir in the lime juice to taste.
