1 1/2 lbs pork -- 750g
1/2 lb Pork fat -- 250g
1/2 tsp Ground allspice
1 tsp Salt
1 pinch ground pepper
1 pinch dried sage -- or marjoram
1 pinch Ground ginger
1 pinch nutmeg
1 clove
1 pinch cayenne pepper
Mince the meat and fat twice, then mix very well and season. (Fry a tsp or so each time to check the flavor until you get it the way you like it.) Add the herbs and any spices used. Fill skins as usual
