1 1/2 kg lamb, all cuts, separable lean and fat, R- -- (700g)
lamb bones for adding flavour -- 9oz (250g)
4 cl garlic -- chopped
2 1/2 tsp chili powder -- (preferably Kashmiri
or 2 tsp chilli powder and 1 teaspoo
1/2 cup yogurt
4 lg shallots -- chopped
2 tbsp vegetable oil -- or lite olive oil
4 clove
2 tsp cardamom
2 bay leaves
1 tsp mace
1 tsp coriander -- powder
1 tsp fennel -- powder
1 tsp ginger -- powder
14 tsp turmeric
1 1/4 tsp salt

Rogan means meat fat and Josh literally means heat. The traditional dish used very fatty meat, but today we use leaner meat and a minimum of oils. the heat comes from the spices. Different areas use different spices though the dish remains basically the same.

Boil the lamb and bones with the garlic and 1/2 teaspoon salt in 6 cups water in a cooking pot for 20 minutes. Remove from the heat. Remove the meat and set aside. Skim off the scum and strain and reserve the cooking liquor.
Make a paste of chilli powder and/or paprika by mixing with a little water. Whisk the yoghurt and set aside.
Fry the shallots in the ghee or oil in a pot until lightly browned (this will take about 12 minutes). Add cloves, cardamoms, cinnamon or bay leaves and the mace and fry for 1 minute. Then add the coriander, fennel, ginger and turmeric powders, and the chilli paste and 2 tablespoons water and stir continuously. After 2 minutes add the meat. Saute for about 5 minutes.
Lower the heat and add the yoghurt, stir well and saute for a few minutes.
Add salt to taste, together with 4 cups water. Cook until the meat is tender. Before serving, remove the cinnamon or bay leaves.
