6 lb boneless pork roast -- 3kg
2 tbsp Hawaiian Salt -- or substitute:
2 tbsp rock salt
1 tbsp vinegar
1 tbsp liquid smoke flavoring
Ti leaves or Romaine lettuce for wrapping
Aluminum Foil or a roasting bag
I bet you don't have an imu (Hawaiian oven) dug out in your backyard so I offer this recipe instead.
Rub the salt, vinegar and liquid smoke into the pork . Wrap in leaves, then foil or place in roasting bag, (tied shut.) Place wrapped roast in a baking pan to bake @ 450°F-230°C for 30 mins, then reduce the heat to 325°F-160°C and let the roast bake for another 4-5 hours. This is VERY yummy.
