Yoghurt, Cucumber and Garlic Dip Tzatziki

450 g yogurt -- 1lb
1/2 cucumber
3 cloves garlic -- crushed
2 tbsp mint leaves -- finely chopped
2 tbsp olive oil
1 tbsp white wine vinegar
salt to taste
chopped fresh mint to garnish
Place the yoghurt in a medium-sized bowl. Peel and grate the cucumber, squeezing a little at a time in the palm of your hand to remove the excess water. Stir the cucumber into the yogurt. Stir in the garlic, fresh mint, olive oil and vinegar and season with salt, to taste. Cover and chill in the refrige-rator until required. Just before serving, garnish with chopped fresh mint. Serve chilled
