Stuffed Grape Leaves LC - Papadakis

1 1/2 pounds Ground lamb
1 large Yellow onion -- chopped fine
1 bunch parsley -- chopped
1 bunch fresh mint -- chopped
1 cup pine nuts
1/2 cup fresh lemon juice
1/2 cup olive oil
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1 jar grape leaves
-Water (as needed)

Remove leaves from jar and soak in cold water for 24 hours. Change water a couple of times. Place all ingredients in bowl and mix thoroughly.
Prepare baking tray with a little olive oil spray. Place 2-3 oz of mixture , about 1 tbsp, onto each leaf. Fold ends over and then sides. Place in tray and flatten slightly. Repeat until all the mixture is used. Make sure packets are tightly packed.
Preheat the oven to 350°F-180°C. Cover the stuffed graped leaves with water and cook for about 1 hour.
