1/4 cup olive oil
4 pounds leg of lamb -- about 2 kg
3 garlic cloves -- sliced
1/2 cup lemon juice
1 pinch salt & pepper -- - to taste
1 tablespoon garlic salt
1 teaspoon oregano
2 tablespoons thyme -- freshly chopped
1 teaspoon greek Islands Ethmix™ -- or similar
Marinate Lamb at least 4 hours or overnight in mixture of olive oil, lemon juice, garlic,thyme, salt and oregano. Remove lamb drain and retain marinade. Pre heat oven to 350°F-180°C. Cut small slits into leg. Slice garlic and insert into slits. Rub lemon over the leg and season with salt, pepper and greek seasoning. Cook for 2 to 2½ hours. Turning every 45 minutes, basting with retained marinade.
