Greek Grilled Lamb Salad

2 tablespoons fresh oregano -- or 1tsp dried
1 teaspoon lemon zest
1/3 cup lemon juice
2 garlic cloves -- minced
1 pound lamb, all cuts, l & f, R-T-C -- 500gr
cut into sizeable chunks
1 tablespoon olive oil
1 tablespoon tomato sauce
1 teaspoon dijon mustard
1/4 teaspoon salt
1 pinch freshly ground black pepper
2 quarts lettuce leaves -- asst torn
2 medium tomatoes
each cut into eight wedges
1/4 cup feta cheese -- crumbled
6 large Greek olives -- pit and chop
Combine oregano, lemon zest, half the lemon juice and half the garlic. Marinate the lamb for at least 1 hour. Best overnight. Shake occasionaly.
Drain lamb. Reserve marinade. Bring to boil in small saucepan. Remove from heat.
In an air tight jar combine remaining lemon juice and garlic, tomato sauce, oil,mustard and, salt and pepper. Shake well.
Grill or BBQ lamb basting with marinade.
Arrange lettuce, cheese, olives and tomatoes on 4 plates. Distribute the lamb and drizzle on dressing.
