Greek Egg & Anchovy Salad

8 lettuce leaves
torn into bite-size pieces
110 grams feta cheese -- diced, 4 oz
12 black olives
4 anchovy fillets -- split lengthways
2 eggs -- hard-boiled and
quartered
2 tablespoons olive oil
1 clove garlic -- crushed
1 tablespoon lemon juice
1 pinch freshly ground black pepper
1 tablespoon parsley -- finely chopped
Toss the lettuce, fetta cheese and olives in a bowl and decorate with the anchovy fillets and egg wedges. Combine the oil, garlic, lemon juice and black pepper in a cup and spoon over the salad. Garnish with chopped parsley.
