Grecian Stewed Chicken - Chicken Stefado

4 pounds chicken pieces -- boned, cubed 2k
2 large onions
3 cloves garlic
1/4 cup butter
1 can tomato paste -- (3 oz.)
1 cup chicken broth
2 tablespoons wine vinegar
Salt and pepper -- to taste
1 tablespoon pickling spice
1 teaspoon grated orange peel
4 cups chicken broth
In a large pot, brown chicken, onions, and garlic in butter. Dissolve tomato paste in 1 cup chicken broth; add vinegar and pour over chicken. Add salt, pepper, spices, orange peel and 4 cups chicken broth; bring to a boil. Reduce heat, cover and simmer for 2 hours or until chicken is tender and sauce has thickened.
Delicious served over macaroni with grated cheese.
