Fried Salt-cod Bakaliaro Tiganito

1 1/2 pounds salt cod -- 750g
2 tablespoons flour
2/3 cup cold water
1 pinch salt
1/4 teaspoon baking powder
olive oil

Cut the cod into 4" sections. Soak in water 24 hours. Change water once or twice Discard water. Drain fish. Place in saucepan and cover with fresh cold water. Bring to the boil. Remove fish with slotted spoon and drain. Remove bones and skin. Place about 1/4" olive oil in fry pan. Heat oil to almost smoking. Dust fish with flour. Quickly place fillets in hot oil and reduce heat. Cook until tender about 10 minutes.
Serve on salad with Yogurt or Vinaigrette dressing.
