Beef Stew - Vodino Stifado

1 kilogram beef -- 2 lb
2 large onions -- chopped
1/3 cup olive oil
salt and pepper -- to taste
1 teaspoon ground cinnamon
2 bay leaves -- (2 to 3)
2/3 cup dry red wine
1/2 cup white wine vinegar
Cut the meat into 2-21/2 cm cubes and salt. Heat the oil in a wide-based pan and fry the meat gently. Remove the meat and fry the onions gently. Remove the onions and return the meat to the pan. Add the pepper, cinnamon, bayleaves, wine and vinegar. Cover and simmer for about 10 minutes. Pour insufficient water to cover the meat and continue to simmer until the meat is half cooked. Add the onions and continue to cook until the meat is tender and the sauce thickens. While cooking, keep an eye on the water level and add some whenever necessary.
