1 tbsp oil
1 onion -- sliced
1 cl garlic -- crushed
1/4 cauliflower flowerets -- diced
1/2 lg carrot -- sliced
1 leek -- sliced
1 stalk celery -- chopped
3 tbsp sherry
3 3/4 cups chicken stock
1 tsp mixed herbs
Salt and freshly ground black pepper
Heat the oil in a large saucepan and fry the onion and garlic until softened. Add the cauliflower, carrot leek and celery and stir until coated with oil.
Add the sherry, stock and herbs and season with salt and pepper. Bring to the boil, cover and simmer for 25 minutes. Serve hot with grated.
