675 g whitebait -- 1 1/2lb
75 g soy flour -- 3 oz or isolate
Salt and pepper
Oil for frying
1 dash Cayenne pepper
1 tbsp chopped parsley
Lemon

Wash the whitebait and dry them carefully in a tea towel. Mix the flour with the salt and pepper. Shake the flour over them while they are still in the cloth, until they are all covered.
Heat the oil until hot and almost smoking and quickly fry the whitebait for 1 minute. Remove from the oil and drain. Heat the oil until it is smoking and dip the fish again for a further 1 minute until golden brown. This second frying will ensure they are crisp on the outside. Remove and drain.
Sprinkle with a little cayenne pepper and the chopped parsley. Serve with the lemon cut into four wedges.
