STILTON CHICKEN ROLLS

4 chicken breasts -- skinned
100 g Stilton cheese -- 4oz grated
1/3 cup butter
8 slices smoked back bacon -- rinded
2 tbsp olive oil
2/3 cup red wine
2/3 cup chicken stock
Salt and freshly ground black pepper
1 tsp corn flour -- or xanthium gum
Few sprigs watercress

Slice the chicken breasts in half horizontally and beat the pieces flat.
Beat the cheese with the butter until soft then spread it over the chicken breasts. Roll them up, wrap in bacon and secure with cocktail sticks.
Heat the oil and fry the chicken rolls until lightly browned on all sides. Add the wine and stock, bring to the boil, cover and simmer gently for 35 minutes, turning occasionally, until the chicken is cooked through and tender.
Transfer the chicken to a warmed serving plate and remove the cocktail sticks. Mix the cornflour with a little water, stir it into the pan and simmer, stirring, until the sauce thickens. Pour over the chicken and serve garnished with watercress.
