1 rabbit
450 g bacon -- 1 lb alices
1 tbsp butter
1 1/4 cups beef stock

Traditionally a poacher’s pie which went out of favour for many years. Rabbit is easily obtainable from most
supermarkets and good butchers. With its own distinctive flavour it makes a filling dish for lunch, dinner or supper.
Chop the bacon into small pieces and joint the rabbit.
Fry the bacon in a frying pan until it is cooked but not brown and add the pieces of rabbit. Cook, turning, until browned on all sides. Place the rabbit and bacon in a deep pie dish. Season with salt and
pepper Pour over the stock.
Bake at 350F/180C/gas mark 4 for 1 1/2 hours.
