1 lg lobster
75 g unsalted butter -- 4oz
2 tbsp lemon juice
Black pepper

The epitome of luxury and has been for many years, lobsters were once plentiful and made an elaborate dish. They can be served with a creamy white or cheese sauce laced with brandy and quickly grilled for an elegant supper dish and look wonderful in a cool, dressed salad.

Cut the lobster if half lengthways and remove the black or greenish sac from the head and the black or green thread which runs the length of the body.
Place the lobster on an ovenproof tray and season with the pepper. Put small pieces of butter over the flesh and cook under a hot grill for 10-15 minutes.
Pour over the lemon juice and serve at once.
