HERRING IN OATMEAL

4 med herring fillets
Salt and freshly ground black pepper
1 egg -- beaten
50 g oatmeal -- 2 oz
1 tbsp butter
1 tbsp oil
1 lemon -- cut into wedges
Season the fish fillets well with salt and pepper.
Dip the herring in egg then in oatmeal, pressing the oatmeal so that it is well covered.
Heat the butter and oil and fry the herrings for about 5 minutes on each side until cooked through and golden brown. Drain well and serve garnished with lemon wedges.
